Wonderful Spanish soup is rich in garlic flavour (don’t hesitate to use plenty of garlic!)

Fry the garlic, ham and paprika in olive oil to extract the maximum flavour, and then add water, that’s it. The boldness and no-frill rusticity of this soup is so enticing.
